Meet Garby
40 Years in the Kitchen. One Simple Mission: Make Great Food…
I’ve spent more than 40 years in professional kitchens, and I still love cooking.
I never set out to become a chef. It just happened. One kitchen led to another, and cooking became my career—and a huge part of my life.
I learned the craft in French kitchens before becoming Executive Chef at The Garden Gourmet, a French restaurant on Maryland’s Eastern Shore. I then moved into the hotel industry, where I learned to run restaurants, serve large groups, and create memorable guest experiences.
But restaurants were always where my heart was.
More than 30 years ago, I joined a young restaurant company called The Cheesecake Factory. That became an important chapter of my career, teaching me about food, leadership, consistency, and the importance of quality.
After 30 years there, I was ready for something new.
So Why a Food Trailer?
Garby’s is the next chapter.
We’re bringing four decades of professional kitchen experience to a smaller, more personal setting. No corporate dining room. No giant restaurant. Just great food, made from scratch and served from our food trailer.
Our philosophy is simple:
Take care of the guests.
Take care of our team.
Never compromise on the food.
That’s Garby’s: 40 years of experience, a love of cooking, and great food served wherever the party is. Whether it’s a private party, corporate event, wedding, festival, or celebration, we’d love to be there.

“We're here to serve you" means hospitality comes first, whether it's a backyard birthday or a wedding. Every guest gets treated like they matter, because they do.
WAGYU IS THE FOUNDATION, NOT THE FEATURE
Wagyu isn't the topping here; it's the backbone of our menu. Every dish, from the smash burger to the egg rolls, is built around it. We let the wagyu speak for itself.
MADE FROM SCRATCH FAMILY RECIPES
Grandma Rosie's macaroni salad isn't a tagline; it's an actual recipe. Same with the house-made cheese sauce, bacon jam, and secret sauces on the burgers. Elevated doesn't mean impersonal here.
